Shredded BBQ Pork



This takes a long time to cook but the result is really worth it and the amount of work you actually have to do is very minimal. I like to prepare it the night before, stick my crock pot bowl in the fridge overnight and start it in the morning. Coming home to the way this smells is a very nice way to end the day.


cook time: 8 hours

pork butt or shoulder (about 3 lbs)
40 oz bottle of Sweet Baby Ray's Honey BBQ Sauce (or your favorite sauce)
1/2 cup water
1 teaspoon garlic salt
1/2 teaspoon cayenne pepper

Put a crock pot liner in your crock pot and spray lightly with Pam
Trim fat off pork and discard
Heat a large skillet over medium high heat and brown pork on each side

Pour entire bottle of BBQ sauce into crock pot, use 1/2 cup of water to get all the sauce out of the bottle and add to crock pot too

Add spices and stir to combine
Put pork in crock pot, put lid on and turn on low for 8 hours

When ready to serve use a large fork and tongs to shred pork while it is still in the crock pot (be sure not to cut bag)

Mix up pork and sauce

Serve with corn on the cob, sweet potatoes, or on a bun with a light veggie on the side.
Top sandwiches with caramelized onions, mushrooms, jalapeno, green chile, anything you'd like.

Makes about 8 cups
per serving (1/2 cup): 260 calories
