Thai Noodles and Snow Peas


This easy one dish meal makes ordering take-out a thing of the past.
This peanut sauce is incredibly versatile and is fantastic on top of steamed vegetables and rice.

5 1/2 oz dry rice noodles (A Taste of Thai)
1/3 cup dry roasted peanuts
2 tsp. dark sesame oil
1/2 tbsp minced garlic
1 6 oz package snow peas
1/2 cup shredded carrots
4 slices lime

Sauce: 
1/3 cup hot water
1/3 cup low sodium soy sauce
3 tbsp creamy peanut butter
1/2 tbsp Chili Garlic sauce 
1 tsp dried cilantro

-Put noodles in a big bowl and pour very hot water over them until they are covered with about 2 inches of water and stir to separate
-Let them soak for 30 minutes

-Combine sauce ingredients (hot water, teriyaki sauce, soy sauce, chili garlic sauce, peanut butter, and cilantro) and whisk until smooth

-Heat sesame oil over medium heat in a big sautee pan
-Add garlic, snow peas, carrots and stir
-Add peanut sauce
-Drain noodles and add to sautee pan
-Stir until thoroughly combined
-Cover and stir every so often for about 5-7 minutes, until noodles are soft, and vegetables are tender-crisp
-Stir in peanuts and serve with slices of lime
