Veggie Tacos



 When I decided to stop eating meat tacos were obviously off the list of meals I would be enjoying, right? Nope...I like this delicious taco filler even more than I ever enjoyed the real stuff. It is an incredibly simple meal that is very tasty, colorful, and filling.


2 small zucchini (1/2 lb), washed and chopped into chunks
1 ear of corn, kernels removed from cob
8 white mushrooms (1/4 lb), wiped clean and chopped into small pieces
1 tbsp minced garlic
1 tsp olive oil
1/2-1 tbsp chile powder
1/8 tsp cayenne
1 tsp cumin
 whole wheat tortillas

Sauté the zucchini, mushrooms, and corn kernels in the olive oil with the minced garlic
Once they are cooked add the chile powder, cayenne, and cumin

Warm the tortillas in the oven for a few minutes then top each tortilla with veggie taco filling and a little pinch of cilantro

Any of your other favorite taco toppings would be great on these too
