Grilled Corn: Mexican & Jamaican Style

 

This post seems silly with the weather we've been having lately (low 50s and rain) but I know most people still have the warmth of the summer months hanging on longer than we did! With that said I hope everyone is still enjoying the fantastic bounty of corn that hot weather brings. We've been eating it like it's going out of style over here, probably because its seemingly short-lived season ends in October. Through the many ways I've prepared it I found that grilling it and dusting it with spice mixes perfectly compliments the corn's natural sweetness.

I know cooking corn isn't exactly rocket science but it was quite fun to experiment with all kinds of flavor combinations (Asian spiced corn is not great by the way). These two variations were outstanding enough that I just had to share.

2 medium ears of corn, husks and silk removed
olive oil sprayer

1/2 lime cut into wedges
2 tsp chili powder
sprinkling of cumin
1/2 tbsp fresh cilantro, chopped
-or-
2 tsp Jamaican Jerk Spice (see recipe below)

Jamaican Jerk Spice 
(will make more than you need but it keeps really well)
1 tbsp Splenda brown sugar
1/2 tbsp smoked paprika
1 tsp garlic salt
1/4 tsp cayenne pepper
1/4 tsp dried thyme
1/8 tsp dried and ground allspice
1/8 tsp cinnamon

Bring a large pot of water to a boil and add corn (husk and silk removed)
Boil for about 7 minutes, until kernels are somewhat tender but still plump

Preheat grill or grill pan to medium high heat

Remove corn from water, pat dry with a paper towel and spritz each ear with olive oil
Place on preheated grill for 5-7 minutes until you get crisp grill marks, turn ears every once in awhile

Mexican
Once corn is done grilling rub each ear with a slice of lime and sprinkle with chili powder and cumin
Top with cilantro 

Jamaican 
Take corn off grill and sprinkle 1 tsp seasoning on each ear of corn over a plate
Roll corn in excess seasoning until sufficiently coated

Servings 2
Per serving (1 ear of corn with seasoning) 110 calories
